Easy tuna and vegetable lasagne

This is not an exact kind of recipe; it’s more just some ideas to try out. I kind of started this dish as a way to use up some vegetables and then kept on adding…You can substitute as much as you want. If you want it to be veggie then leave out the tuna and if you want it to be vegan there are are few substitutes that you can try. Basically a lasagne consists of three parts, the dried lasagne, the tomatoey sauce and some white sauce. Then you add a bit of cheese on top.

Ingredients for Tomatoey Sauce

  • One large onion
  • One green or red pepper (or both)
  • A few little tomatoes (or larger ones chopped)
  • A couple of courgettes
  • A few mushrooms
  • 3 cloves of garlic
  • 2 tins of tomatoes
  • salt and pepper to taste
  • 2 tins of tuna
  • Olive oil for frying

Ingredients for white sauce

  • butter (or similar)
  • plain flour
  • milk
  • Nutmeg (if desired)

Other ingredients

  • One pack of dried lasagne sheets
  • Plenty of grated cheese


  • Chop all veg and fry in a frying pan until soft and tender
  • Add tuna and tomatoes and cook fairly briefly
  • Set tomato mix to one side while you prepare the white sauce
  • In a separate pan add the butter and cook until melted
  • Gradually add the flour and mix with the butter on a low heat
  • When this is combined and the mixture sticks together away from the side of the pan you have your ‘roux’
  • Gradually add the milk and keep on stirring until it is smooth and is a thickish pouring consistency
  • Add salt, pepper and nutmeg if desired

Assembling your lasagne

It is pretty easy to do. It’s just layers of white sauce, pasta, tomatoey sauce, pasta and so on. Keep going until your dish is full and then add white sauce and grated cheese to the top. Pop in the oven for around 50 mins at 180 degrees and you will have a yummy lasagne for your tea!
