Green lentil soup is a tasty meal or snack which is great for keeping warm on a cold day or for any time, any day, any weather.
Ingredients
250g dried green lentils, rinsed
2 large onions, finely chopped
3 large carrots, diced
3 large sticks celery, finely sliced
3 large cloves garlic
Level desert spoonful caraway seeds
Olive oil
Hot vegetable stock
Salt and black pepper to taste
Parsley and grated cheese to garnish
Method
Soak rinsed lentils overnight in enough cold water to cover.
In a large soup pan; gently sauté onions in olive oil until transparent then add crushed garlic, diced carrots and chopped celery and continue to sauté for a further 5 minutes.
Add caraway seeds, lentils and enough hot stock to cover, and bring to the boil. Simmer gently for approx. 20 minutes, stirring occasionally until lentils and vegetables are cooked.
Add stock as needed during simmering, the lentils will absorb liquid as they cook.
Add salt and pepper to taste, and sprinkle with chopped parsley and grated cheese.
Sometimes, chopped sautéed bacon is a tasty addition.
