Jack for all tastes?

"Jack be nimble. Jack be quick
Simple recipe, done in a tick!"

Fancy something quick and tasty? This is a lovely recipe that works well every time…


  • I tin of jackfruit
  • 1 tin of sweetcorn
  • A little mayo
  • Spices of your choice (I used salt and chilli flakes. Cajun seasoning also works well)


Open the tin of jackfruit and drain well.

Mash lightly with a fork to shred the jackfruit

Add sweetcorn and then mayo

Add any spices and stir

Serve with pasta, baked potatoes or a sandwich

Eat and enjoy!
