A great way to use up all of that leftover Christmas turkey…
- Turkey still on the bone
- White wine (up to one glass)
- Mustard (wholegrain from the jar or other)
- Worcester sauce (generous dashes)
- Soy sauce (one dash)
- Bay leaves (2)
- Salt and pepper to taste
- Cayenne pepper (optional)
Remove as much turkey as you can and put to one side.
Place the rest of the turkey on the bone in a saucepan of boiling water and boil until the small bones break. (around 30 mins).
Sieve into another pot so that you just have the broth. Retain the liquid.
Remove any extra meat from the bone and set to one side.
Add chopped carrots to the liquid and boil until fairly soft.
Add sliced onions and turkey to the pot and simmer for 5 minutes or so.
Add the wine, Worcester sauce, soy sauce and the rest of the seasoning to taste and simmer for a couple of minutes.
Can serve immediately, refrigerate or freeze.
